Researchers of the area of Food Toxicology have just published an article focused on analyzing the health risks associated to the dietary intake of several food processing contaminants (PFCs). This study was aimed at determining the levels of acrylamide, furans, monochloropropanediols (MCPDs) and glycidyl esters (GEs)) in foodstuffs purchased in Catalonia and assessing the human exposure for different population groups.
